BBQ Chicken Pizza

Ever had a meal at a restaurant and enjoy it so much you want to copycat the creation at home, to indulge again and again?  That’s how I feel about pizzas.  Sure, margarita pizzas are good, and so is plain cheese, but I love it when it’s a fun pizza, when there is something on there that you don’t really expect, like the bruschetta pizza I had in Sicily that I still drool over.

One of the most simple, yet delicious pizzas is the BBQ chicken pizza I’ve had at Cheesecake Factory, CPK, etc.  The simplicity of red onion, cilantro (oh, how I love cilantro), and fresh mozzarella cheese, smothered with BBQ chicken.  Yum.  It’s a perfect dinner, or even a fancy weekend lunch.

You could make your own crust, or, if you’re in a time pinch like I was last weekend, you could use Naan bread, or Indian flat bread.

First, start with cooking your chicken, drowned in BBQ sauce, I like Sweet Baby Rays.

Chop up your red onion into half slices, finely chop cilantro, thinly slice fresh mozzarella, and dice your chicken.

Spread BBQ sauce on your dough, or Naan bread, and top with fresh mozzerela cheese, then sliced onions, and chicken.  Pop in the oven until the cheese bubbles and turns golden brown.

Top with cilantro, lots of cilantro if you’re like me.

I like to leave my pizza on the pizza stone for a good 20 minutes after it comes out of the oven.  It gets the crust crispy, and gives plenty of time for cooling.  Important when you don’t want to burn your mouth.

BBQ Chicken Pizza

2 Naan flatbreads (or make your own dough)
4 thin chicken cutlets
1 tablespoon olive oil
1/2 cup BBQ sauce, divided into thirds
1/4 sliced red onion
2 oz. fresh mozzarella
4 tablespoons cilantro

Preheat oven to 450 degrees.
Warm oil in medium-high skillet.  Add chicken and cook 2-4 minutes on each side, adding 1/3 of the BBQ sauce.
While the chicken is cooking, finely slice fresh mozzarella, red onion, and cilantro.  Once the chicken is cooked, move to the cutting board and let cool, then dice chicken.
Transfer Naan breads to warmed pizza stone (I like to leave my pizza stone in the oven while it’s preheating), and add remaining BBQ sauce to both Naan flatbreads like a pizza sauce.  Add fresh mozzarella, red onion, and chicken.
Bake at 450 for 10-12 minutes, or until cheese bubbles and starts to turn golden brown.
Let rest for 15-20 minutes and then cut into pizza slices and enjoy.
